Even now with over 20 locations, food is made to order –limes are squeezed by hand, refried beans are made in small batches, guacamole is made multiple times daily from whole fresh avocados and their famous tortillas are hand rolled and individually pressed. Owners Judson and Peter Holt focus on staying loyal to who they are and maintaining integrity in their locations, food and atmosphere.
