Rosa’s Cafe Tortilla Factory is an upscale, fast-casual restaurant concept – one of the fastest growing segments in the restaurant industry. The first Rosa’s Cafe was built in 1983 in San Angelo, Texas. In 1995, Bobby D. Cox purchased the brand with its five locations. Today, Rosa’s Cafe has expanded to more than 40 company-owned restaurants with Texas locations in Abilene, Amarillo, Burleson, Cedar Park, College Station, Coppell, Denton, Euless, Fort Worth, Frisco, Highland Village, Hurst, Killeen, Lake Worth, Lewisville, Lubbock, Midland, Odessa, Rockwall, Round Rock, San Angelo, Waco, Watauga, Weatherford and Wylie. There is one company-owned Rosa’s Café in Hobbs, NM and an independently owned Rosa’s Café in Temecula, California.

The signature products at Rosa’s Cafe are beef and chicken fajitas, marinated and grilled to perfection over real West Texas mesquite wood giving them their distinct taste. Boasting the attributes of most full-service, sit-down Mexican food restaurants, Rosa’s Cafe is unique in having an express drive-through window with an average wait time of less than three minutes. Other popular menu items include crispy and soft tacos, Mexican dinner plates, sour cream chicken enchiladas, taco salads, burritos, tostadas, tamales and made-from-scratch tortillas and sopapillas. The complimentary salsa bar includes fresh pico de gallo and salsas of different seasonings to top off any meal with a mouth-watering zest.
