We filmed our (pie)lot episode of “Explore Like a Local,” at the family-owned bakery and art gallery Papi’s Pies. As we walked through the off-white door, we were wafted with the enticing smell of warm crust and greeted with friendly smiles from co-owners Jose Parra and Julio Palacios. Jose gave us an exclusive kitchen tour where his award-winning pies and home-cooked confections are crafted. Each dish is delicately made and filled with fresh ingredients and fillings. Papi’s Pies is a highly-rated business with 4.8 Google review stars and was voted the best place in Texas for cherry pie by “Eat This, Not That.” They are dedicated to creating a culinary experience at their bakery and bringing people together over a slice of pie, quiche, or pastry.

After watching the pie-perfecting process, we ventured to the outdoor patio for a conversation with Jose. He recounted how friends encouraged them to open a bakery and share their family recipes with the community. They were convinced to open and have been serving dishes to Round Rock for five years now; time really flies when making pies! After the chat, Rell and Jessica were eager to taste a slice of their famous pie. Following the first bite, they were sent to pie heaven. The pie has the perfect combination of sweet and tart and just the right amount of sugar. The crust is flaked to perfection, and the filling has an idyllic consistency. Along with their pies, they have handmade dishes from their childhood kitchen. They serve family Bolivian and Mexican dishes from their homes, like Salteñas, an empanada breakfast dish. They also serve European dishes like Quiches, Frittatas, Crêpes, and other desserts and pastries.

In addition to their cuisine, they are known for their art scene. They partner with local artists and share their walls to display artwork. They involve the community and transform their bakery into a flourishing art hub. Artwork is sprinkled throughout, and there are handmade birdhouses, art displays from featured artists, and colorful murals adorning an outdoor wall. Your eyes can feast on works of art while you feast on a delightful delicacy.
